True Love

I’m happy to say that my dad loves my mom. One way you particularly can tell this is true is when Mom asks Dad to make or fix something for her, he builds or fixes whatever she asked for to perfection. I remember on various occasions everything from Mom’s hairdryer to the toaster to the toboggan sled to the screened-in patio being on Dad’s to-do list.

Today’s Recipe

Ready in 15 minutes for 3 people

1 package soft tortilla wraps
1 jar wrap sauce (for fajitas or burritos, not for tacos!)
250g pork (in blocks)
1 tiny can corn
2 bell peppers (for instance, red and yellow)
1 package shredded cheese
125g sour cream

Wash the peppers and cut them into chunks. Drain the corn. Cook the pork in oil in a skillet on medium heat. When the pork is almost done, add pepper chunks and cook another 3 minutes. Add wrap sauce and corn and warm through. Put a couple of the wraps on a plate and microwave a bit so they’re warm. Serve the cheese and sour cream in next to the wraps and filling; everyone can make their own wraps. Mmmm, it was yummy!
