Today Tim and I decided to enjoy some appetizers after work and after that to make “poffertjes” for dinner. Poffertjes are little Dutch pancakes:

a Work of ArtYou have to make poffertjes in a special pan - as you can see to the right - with round indentations so that the little cakes take on the right form. Our first couple batches were so-so: nice and bronzed at first, but after we turned them the second side never got brown because it was too flat and didn’t sink down into the round form properly. Then I remembered you have to turn these while the batter on the second side is still not firm, so that the second side also gets a nice round form.

A big pileNow here we are at the end of the night with a big plate of pretty poffertjes (say that 3 times fast) … and no room in our stomachs! Pancakes, anyone?

    Mmmm poffertjes. Even thoughwe only ate a few… we rocked the kitchen! What are we going to do with all the left over poffertjes though. Hmmm.
